With the increasing demand and production of processed meat food, safety for the consumers is an aspect of great importance and it is a challenging task. It is well known that hazards (mainly pathogens) associated with food be the cause of food borne illness. Public health safety is a serious issue and can be prevented by adopting HACCP in food chain. HACCP program has been developed for consumer food safety as well as to protect manufacturer from food safety- related issues.
